Being from down south, it means 8 - 10 hours......
The term overnight would mean at least 8 hours or more.
Yes, an ';overnight soak';, such as you might be instructed to do with dry beans, is anywhere from 8 to 12 hours, although as few a 4 to 6 hours is often enough.





';Overnight'; is just a convenience term, so nobody has to stand around their kitchen, watching a pot of beans, for so many hours!
