Does anyone have any good cold desert recipes that could be used in a cooking comp?

It has to be a cold desert, it has to take less than 45 minutes to prepare %26amp; cook %26amp; we only have a 1 burner gas cooker to use.Does anyone have any good cold desert recipes that could be used in a cooking comp?
How about a trifle? Here is one of my favorites:

TRIFLE

1 lg. container whipped topping

1 can sweetened condensed milk

1 (8-oz.) pkg. cream cheese

1 tsp. vanilla

1 lg. angel food or sponge cake, torn into small pieces

1 lg. can fruit pie filling [blueberry, strawberry or cherry]

fresh fruit or mint leaves for garnish

In large bowl of mixer combine whipped topping, condensed milk, cream cheese and vanilla. Beat until creamy; set aside. In a large glass bowl place a layer of cake, then a layer of fruit pie filling, then a layer of the cream mixture. Be generous with cake and cream mixture, but just drizzle pie filling around edges and over center. Repeat layers. Garnish with mint leaves or fresh fruit if desired. Cover with plastic wrap and refrigerate overnight before serving. Freezes well without garnish. Thaw before serving.Does anyone have any good cold desert recipes that could be used in a cooking comp?

Red jello with bananas, real whipped cream and chocolate syrup. Could always add some toasted almonds on top and marshmallows.
THAI STICKY RICE WITH MANGO DESSERT

2 cups glutinous (sticky) rice, soaked in cold water for at least one hour and drained

1 1/4 cups coconut milk, canned or freshly prepared

pinch of salt

2 tablespoons of sugar

2 large ripe mangoes, peeled and sliced

In a saucepan bring to a boil: rice, coconut milk, salt, sugar and 1 1/4 cup water. Stir. Lower heat and simmer, uncovered, about 8-10 minutes until all the liquid is absorbed. Remove from heat. Cover and let stand 5 minutes.

Transfer rice to a steamer or double saucepan and steam 15-20 minutes over boiling water, until rice is cooked through.

Mold the cooked rice into individual ramekins or small cups lined with plastic wrap. Cool to room temperature. At serving time unmold onto a plate and top with mango or even strawberries.
