How should i cook an eggplant to go with a steak? or doesnt that go with steak? any recipes?

You can make some veggies and eggplant stir fry and have it with steak.


But I personally prefer potatoes/mashed potatoes with steak

Cut the eggplant into slices and drizzle with a little olive or sunflower oil on each side, if you have some pesto on hand then use that instead; sprinkle with a tiny pinch of dried cayenne or chili pepper and grill for a couple of minutes a side. Put aside until your stead is ready and then transfer the slices to the steak pan to heat up and take on more flavor whilst you are serving the rest of the meal. serve as soon as the plates are ready.How should i cook an eggplant to go with a steak? or doesnt that go with steak? any recipes?
Remember eggplant has no taste so you want to cook it with something that has flavor, I recently cooked eggplant on the grill and I used olive oil, balsamic vinegar, garlic, salt and pepper and soaked the eggplant in this and brushed it while grilling. I swear, it still tasted of nothing lol...but try this as it is plenty of flavor.

but Ill tell you my favorite and only way I do mine,And YES Eggplant is good with steak.





eggplant


1 onion chopped fine


4 cloves garlic chopped fine


2 tomatoes


basil


mozzarella


small can tomato sauce





Slice eggplant into rounds


season to your liking (I prefer salt,pepper and garlic.


saute in olive oil till light brown and remove from pan.


saute onions and garlic till soft add the sauce and basil, mix well.


arrange in casserole ,the eggplant ,tomatoes on top,if you need to layer it ,thats okay.


pour the sauce on top.


bake 30 minutes at 350 and then top with mozzarella return to oven for 7-10 min.


garnish with basil and parmesan.
