I like to make it on Memorial Day to take it to work for at least


100 People!What is a good easy recipe that is real fast to cook to make CORNBREAD!!?

Corn Bread for 50 recipe


12 eggs, lightly beaten


6 cups milk


1 1/2 cups vegetable oil


9 cups self-rising yellow cornmeal


6 cups all-purpose flour


1 1/2 cups granulated sugar





Grease two 12 x 20 x 2-inch pans and set in the oven to heat.





In a very large bowl combine all the ingredients in the order given and pour into the hot pans. Bake at 450 degrees F for 30 to 35 minutes or until light brown.

I think I would do corn muffins. No cutting and easier to dole out

Adapted from the Quaker Corn Meal recipe.





Ingredients





* 1 1/4 cups all-purpose flour


* 3/4 cup enriched corn meal


* 1/4 cup sugar


* 2 teaspoons baking powder


* 1/2 teaspoon salt (optional)


* 1 cup skim milk ( ALWAYS use half and half)


* 1/4 cup vegetable oil


* 2 egg whites or 1 egg, beaten





Directions





Preheat oven to 400F. Combine dry flour, corn meal, sugar, baking powder and salt (if desired). Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into 12 greased or paper-lined medium muffin cups. Bake 15-20 minutes or until golden brown.

Cornbread





Serves: 8 Servings





1 c All-purpose flour


1 c Cornmeal


1/4 c Sugar


1 tb Baking powder


1 ts Baking soda


1 Egg


1 1/3 c Milk


3 tb Butter; melted





Stir together dry ingredients. Separately, beat together egg, milk, and


butter. Pour liquid ingredients into dry; stir only to moisten. Pour


immediately into buttered 8'; square pan. Bake at 425 degrees for 30


minutes.
That's a whole lot of cornbread. Here you go:





INGREDIENTS


25 cups all-purpose flour


12-1/2 cups white cornmeal


6-1/4 cups white sugar


2 cups and 1 tablespoon baking powder


1/2 cup and 1 teaspoon baking soda


1/4 cup and 1 teaspoon salt


25 cups buttermilk


6-1/4 cups corn oil


25 egg





DIRECTIONS


Preheat the oven to 400 degrees F (200 degrees C). Grease an 8 inch glass baking dish.


Sift the flour, cornmeal, sugar, baking powder, baking soda and salt into a large bowl. In a separate bowl, whisk together the buttermilk, corn oil and egg. Pour the wet ingredients into the dry ingredients, and mix just until blended. Pour into the prepared pan, and shake gently to level it out.


Bake for 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean and the top is golden brown. Serve hot. Just with butter will do, it is plenty sweet enough!

3 tablespoons canola oil


2 cups yellow or white cornmeal


1 teaspoon baking powder


1/2 teaspoon salt


1 large egg, beaten


1 1/2 cups nonfat milk or nonfat buttermilk








Preheat oven to 450 degrees F. Place oil in a 9-inch cast-iron skillet or similar-size glass baking dish and transfer to the preheating oven.


Mix cornmeal, baking powder and salt in a medium bowl. Add egg and milk (or buttermilk); stir until just combined. Remove the pan from the oven and swirl the oil to coat the bottom and a little way up the sides. Very carefully pour the excess hot oil into the cornmeal mixture; stir until just combined. Pour the batter into the hot pan.


Bake until the bread is firm in the middle and lightly golden, about 20 minutes. Let cool for 5 minutes before slicing. Serve warm.


it only makes 8 servings though
There is a recipe with cornbread, broccoli, and cheese. It is sooooo good. I'll try to find it for you.

It is a lot of eggs and probably fattening but is sooo good and okay for special occasions.
