Any cook once eat twice recipes out there?

I'm looking for some new ones. The pork or beef roast one night that turns into pulled beef or pork bbq sandwiches the next night has been done and done! You don't have to include recipes, just some ideas would be nice. Here are some I use:





1. Cook steak on the grill and serve with veggies and rolls. Cook one extra steak to refrigerate. Slice the extra steak the next day and turn it into steak salad. Serve on a bed of greens like spinach and top with tomatoes, feta cheese, walnuts and dressing. Works with chicken too.





2. Marinate chicken breasts in buttermilk (makes them very juicy). Cook a couple extra. The first night, just have grilled chicken with side dishes, the next day turn that juicy chicken into sandwiches or wraps.





3. Buy a whole roasted chicken (these are usually cheaper than buying a whole raw chicken to cook) and eat as roasted chicken with side dishes the first day and turn the left over chicken into a simple chicken casserole the next night.





4. Cook a teriyake pork loin for dinner one night and turn the left overs into pork fried rice the next night.Any cook once eat twice recipes out there?
with my cooked chicken I make fried rice with whatever veggies I have in the fridge and add the leftover cooked chicken to it. With beef I make shredded beef tacos (lime juice, grilled onions and peppers and corn tortillas with tomatillo salsa).





I also use the leftover meat and make enchiladas with cream of chicken soup, green chiles, shredded cheese and corn tamales. serve with rice and beans.Any cook once eat twice recipes out there?
I like to cook a garlic-crusted pork loin in my crock pot until it basically falls apart.


The first night it can be eaten as is, in roast form, with a side of pasta or vegetables.


The second time, I shred the meat with a fork, top a flour tortilla with it and add some cilantro leaves and avocado. It's delicious.





You could also try any recipes by Robin Miller. She is a pro at making cook once eat twice meals.
If you have spaghetti and meatballs/meat sauce one night, the next day mix it all together, put in a casserole dish, top with mozzarella and Parm, dot with black olive slices, and bake until bubbly.
